Quick Quinoa Chips Recipe

Serves: 3 People
Cooking time: 15 minutes

Ingredients

  • 1 cup quinoa
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 red onion, diced
  • 1 zucchini, diced
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/2 cup vegetable broth

Instructions

Preheat the oven to 410 degrees Fahrenheit. Line a baking sheet with parchment paper. In a medium saucepan, cook the quinoa according to the package instructions. Remove from heat and let cool. In a large skillet over medium heat, heat the olive oil. Add the onion and zucchini and cook until tender, about 5 minutes. Stir in the quinoa, black pepper, cumin, chili powder, and vegetable broth. Cook for 2 minutes until heated through. Place heaping tablespoons of the mixture on a baking sheet lined with silicone or parchment paper. Form the mixture into a 1 x 1-inch square by pressing it down and bake for 10 minutes until golden brown.
